- 4 medium zucchini (about 8 inches long each)
- 2 cups cooked shredded chicken breast or rotisserie chicken
- 1/2 cup buffalo wing sauce
- 4 oz cream cheese, softened
- 1/4 cup Greek yogurt
- 1/2 cup shredded mozzarella cheese
- 1/4 cup crumbled blue cheese
- 2 tablespoons ranch dressing
- 2 green onions, finely chopped
- 1 celery stalk, finely diced
- 1 tablespoon olive oil
- 1/2 teaspoon ranch seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 cup shredded cheddar cheese
- 1/4 cup additional shredded mozzarella cheese for topping
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cut zucchini in half lengthwise and scoop out the inside, leaving about 1/4 inch thickness to form boats.
- Brush zucchini boats with olive oil and season with ranch seasoning, salt, and pepper.
- Pre-bake zucchini boats for 10 minutes to reduce moisture.
- Meanwhile, in a bowl, combine shredded chicken, buffalo sauce, cream cheese, Greek yogurt, mozzarella cheese, blue cheese, ranch dressing, green onions, celery, garlic powder, and onion powder.
- Remove zucchini from oven and fill each boat with the buffalo chicken mixture.
- Top with combined cheddar and additional mozzarella cheese.
- Return to oven and bake for 15 minutes until cheese is melted and bubbly.
- Optional: Broil for 1-2 minutes to brown the top.
- Let rest for 5 minutes before serving.
- Garnish with additional green onions and drizzle with ranch dressing if desired.
