A hearty and flavorful Cajun chicken and sausage gumbo that combines a rich blend of spices and savory ingredients, perfect for family gatherings.


Ingredients

  • 1 cup vegetable oil
  • 1 cup all-purpose flour
  • 1 pound andouille or smoked sausage, sliced 1/4 inch thick
  • 2 celery stalks, chopped
  • 1 large green bell pepper, chopped
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 1 pinch Creole seasoning, or to taste
  • 6 cups chicken broth
  • 1 bay leaf
  • 1 rotisserie chicken, boned and shredded

Instructions

  1. Gather all ingredients.
  2. Heat oil in a stockpot over medium heat. Whisk in flour until the roux is smooth and has reached the color of chocolate milk, approximately 8 to 10 minutes.
  3. Add sausage, celery, bell pepper, and onion to the roux. Cook and stir for 5 minutes. Then add garlic and continue cooking for another 5 minutes.
  4. Season with salt, pepper, and Creole seasoning, stirring well to blend.
  5. Pour in the chicken broth and add a bay leaf. Bring to a boil over high heat before reducing to medium-low. Simmer uncovered for 1 hour, stirring occasionally.
  6. Stir in the chicken and let it simmer for another hour while skimming off any foam floating to the top.
  7. Serve and enjoy!

Notes

Gumbo improves with time; allow it to sit for an hour after cooking before serving for better flavor fusion.
