Ingredients

  • 454 g peeled + deveined shrimp
  • 2 tsp (10 ml) ground coriander
  • 1 tsp (5 ml) chipotle powder
  • 1 tsp (5 ml) garlic powder
  • 1 tsp (5 ml) kosher salt
  • 1/4 tsp (1 ml) cayenne pepper
  • 2 limes
  • 2 avocados, peeled + diced
  • 4 small radishes, thinly shaved
  • 2 chile peppers, thinly sliced (red fresno or serrano)
  • 80 ml packed cilantro leaves
  • 8 corn or flour tortillas, charred over an open flame
  • 227 g greek yogurt
  • 2 limes, zested and juiced
  • 1 tbsp (15 ml) honey
  • 1/2 tsp (3 ml) kosher salt

Instructions

  1. In a mixing dish, blend the shrimp with coriander, chipotle powder, garlic powder, salt, and cayenne pepper. Squeeze the juice from one lime into the mixture. Stir thoroughly and allow it to marinate for 10 minutes.
  2. While waiting, in a separate bowl, combine the chopped avocados, radishes, chiles, and cilantro leaves. Add the juice of the remaining lime and mix thoroughly. Season with a bit of salt and put aside.
  3. Warm a large pan over medium-high heat, either on the stove or grill. Pour in enough oil to coat the bottom. When the oil is hot, add the shrimp and saute quickly until they turn pink on both sides and are thoroughly cooked.
  4. To build the tacos, lay a few shrimp in each tortilla. Spoon the avocado mixture on top and finish with a splash of lime yogurt sauce (recipe below).
  5. In a bowl, mix together greek yogurt, lime zest, lime juice, honey, and salt.
  6. Whisk until you achieve a smooth consistency.
