- 6 large eggs
- 1 cup whole milk (or half-and-half)
- 4 oz crumbled goat cheese
- ½ cup grated Parmesan cheese
- Salt and freshly ground black pepper to taste
- ¼ teaspoon nutmeg
- 1 tablespoon fresh chives, chopped (for garnish)
Instructions
- Heat olive oil and butter in a large skillet over medium-low heat.
- Add thinly sliced onions and a pinch of salt, cooking for 10 minutes.
- Reduce heat to low, add brown sugar if using, and continue cooking for 35-50 minutes until deeply caramelized.
- Preheat oven to 350°F (175°C) and grease a 9-inch pie dish.
- In a large bowl, whisk eggs, milk, salt, pepper, and nutmeg until smooth.
- Spread caramelized onions evenly in the prepared baking dish.
- Sprinkle two-thirds of the goat cheese and half of the Parmesan over the onions.
- Pour the egg mixture over everything.
- Top with remaining cheese and fresh thyme.
- Bake for 30-35 minutes until center is just set and edges are golden brown.
- Let rest for 10 minutes before serving.
- Garnish with fresh chives.
