- 1 pound bacon
- 1 tablespoon tallow or bacon grease
- 1 pound boneless sirloin, cut into bite-sized chunks
- 1 pound ground beef
- 1 teaspoon ground cumin (optional)
- 1 teaspoon chili powder (optional)
- 2 cups beef broth
- Kosher salt to taste
Instructions
- Cook the bacon until crispy and set aside, reserving ¼ cup for garnish if desired.
- Preheat a medium Dutch oven or soup pot over medium-high heat. Add the tallow or bacon grease.
- Sear the sirloin chunks for 2-3 minutes per side until browned, then remove and set aside.
- Add the ground beef and optional spices to the pot. Cook for about 15 minutes, breaking apart until browned.
- Return the sirloin to the pot and pour in the beef broth.
- Bring to a boil, then reduce heat to a simmer and cook uncovered for about 30 minutes.
- Crumble the bacon into small pieces and stir into the chili, reserving some for topping.
- Taste and adjust the salt as needed. Serve hot with garnishes like shredded cheese or sour cream.
Notes
For a smoother texture, mash the ground beef further while cooking. Adjust seasoning to taste.
