Ingredients

  • 1 head of cauliflower, chopped
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream or a dairy-free alternative
  • 1 cup shredded cheese (e.g., cheddar or your choice)
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
  2. Add minced garlic and cook for another minute.
  3. Add the chopped cauliflower and vegetable broth. Bring to a boil and then reduce to a simmer. Cook until cauliflower is tender, about 15 minutes.
  4. Use an immersion blender to puree the soup until smooth (or transfer to a blender in batches).
  5. Stir in the heavy cream and shredded cheese until melted and fully incorporated.
  6. Season with salt and pepper to taste. Serve hot.
