Ingredients

- 1 head of cauliflower, chopped
- 1 onion, diced
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream or a dairy-free alternative
- 1 cup shredded cheese (e.g., cheddar or your choice)
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
- Add minced garlic and cook for another minute.
- Add the chopped cauliflower and vegetable broth. Bring to a boil and then reduce to a simmer. Cook until cauliflower is tender, about 15 minutes.
- Use an immersion blender to puree the soup until smooth (or transfer to a blender in batches).
- Stir in the heavy cream and shredded cheese until melted and fully incorporated.
- Season with salt and pepper to taste. Serve hot.
