  • 1 cup matchstick carrots (fresh or frozen)
  • 1 1/2 cups uncooked macaroni noodles (any small pasta shape)
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Parmesan cheese

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking until the onion softens, about 3-4 minutes.
  2. Add the ground beef, breaking it apart as it cooks. Sauté until browned and cooked through.
  3. Sprinkle the flour over the beef mixture, stirring to combine.
  4. Gradually pour in the chicken broth, stirring constantly to incorporate the flour.
  5. Bring the soup to a gentle boil, then reduce heat to medium-low. Add in the matchstick carrots, macaroni noodles, and season with salt, pepper, onion powder, Italian seasoning, and paprika.
  6. Allow the soup to simmer for about 10-12 minutes, or until the pasta and carrots are tender.
  7. Lower the heat and stir in heavy cream. Gradually add the cheddar cheese and Parmesan cheese, stirring until fully melted and creamy.
