- 1 lb ground beef
- 4 slices bacon, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups potatoes, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 2 cups shredded cheddar cheese
- 1 cup milk
- Salt and pepper to taste
- Optional toppings: croutons, green onions
Instructions
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.
- Add the ground beef to the pot and cook until it’s browned. Drain any excess fat.
- Stir in the chopped onion and minced garlic; cook until softened.
- Add the beef broth, diced potatoes, diced carrots, and diced celery. Bring this mixture to a boil, then reduce heat and simmer until the vegetables are tender, about 15-20 minutes.
- Stir in the milk and shredded cheese, mixing until melted and creamy.
- Season with salt and pepper to taste.
- Serve hot, topped with your reserved bacon and optional toppings like croutons and green onions.

For more flavor, consider adding spices like paprika or Worcestershire sauce. Adjust the consistency of the soup with additional milk or broth if necessary.
