Instructions
- In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
- Add chopped onion and minced garlic, sauté until the onion is translucent.
- Stir in diced potatoes and beef broth. Bring to a boil, then reduce to a simmer. Cook until potatoes are tender, about 15-20 minutes.
- Once the potatoes are cooked, stir in the heavy cream and cheddar cheese until the cheese is melted and the soup is creamy.
