Description

A comforting and hearty creamy soup featuring ground beef, tender potatoes, and melted cheddar cheese, perfect for chilly evenings.

Ingredients

Scale
  • 1 lb ground beef
  • 4 cups diced potatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add chopped onion and minced garlic, sauté until the onion is translucent.
  3. Stir in diced potatoes and beef broth. Bring to a boil, then reduce to a simmer. Cook until potatoes are tender, about 15-20 minutes.
  4. Once the potatoes are cooked, stir in the heavy cream and cheddar cheese until the cheese is melted and the soup is creamy.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh parsley and additional cheddar cheese if desired.

Notes

For extra creaminess, increase the amount of heavy cream. Adjust seasoning to taste and consider adding vegetables like carrots for added nutrition.
