- 1 pound chicken breasts (or thighs)
- 8 ounces rotini pasta
- 2 tablespoons olive oil
- 1 tablespoon Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder (optional)
- Salt and pepper, to taste
- 2 cloves garlic (minced)
- 2 tablespoons butter
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup mozzarella cheese
- ½ cup Parmesan cheese
- ½ cup cheddar cheese
- ¼ cup fresh parsley (chopped)
Instructions
- Cook the rotini pasta according to package instructions until al dente.
- Heat the olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, garlic powder, onion powder, and Cajun seasoning.
- Add the chicken to the skillet and cook for 6-8 minutes on each side until golden brown. Remove and let rest.
- Melt butter in the same skillet and sauté minced garlic until fragrant.
- Pour in heavy cream and chicken broth, stirring to combine and bring to a gentle simmer.
- Add mozzarella, Parmesan, and cheddar cheese, stirring until melted and smooth.
- Slice the chicken and return it to the skillet, stirring to coat.
- Toss in the cooked rotini and combine everything well.
- Garnish with chopped parsley and serve immediately.
Notes
For a vegetarian option, substitute chicken for vegetables and use vegetable broth.
