  • 1 cup (240 ml) sliced mushrooms (70 grams)
  • 1 teaspoon (5 ml) dried oregano
  • 1 teaspoon (5 ml) dried basil
  • Salt and pepper to taste
  • 1 cup (240 ml) tomato sauce (240 milliliters)
  • 1 cup (240 ml) shredded mozzarella cheese (113 grams)
  • 1 cup (240 ml) shredded cheddar cheese (113 grams)
  • 1/2 cup (120 ml) coconut cream (120 milliliters)
  • 1 tablespoon (15 ml) cornstarch (8 grams)
  • 2 tablespoons (30 ml) water (30 milliliters)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat.
  3. Add chopped onion and minced garlic to the skillet.
  4. Sauté until the onion is translucent, about 3-4 minutes.
  5. Add ground beef to the skillet and cook until browned.
  6. Stir in chopped bell pepper and sliced zucchini.
  7. Cook for 5 minutes, stirring occasionally.
  8. Add sliced mushrooms to the skillet.
  9. Season with dried oregano, dried basil, salt, and pepper.
  10. Stir in the marinara sauce and mix well.
  11. Simmer the mixture for 5 minutes.
  12. Transfer the meat and veggie mixture to a baking dish.
  13. In a small bowl, whisk together heavy cream and cornstarch.
  14. Add 2 tablespoons of water to the cream mixture and stir.
  15. Pour the creamy mixture over the meat and veggies in the dish.
  16. Sprinkle shredded mozzarella and cheddar cheeses evenly on top.
  17. Bake in the preheated oven for 20-25 minutes.
  18. Remove from the oven when the cheese is melted and bubbly.
