- 1 cup (240 ml) sliced mushrooms (70 grams)
- 1 teaspoon (5 ml) dried oregano
- 1 teaspoon (5 ml) dried basil
- Salt and pepper to taste
- 1 cup (240 ml) tomato sauce (240 milliliters)
- 1 cup (240 ml) shredded mozzarella cheese (113 grams)
- 1 cup (240 ml) shredded cheddar cheese (113 grams)
- 1/2 cup (120 ml) coconut cream (120 milliliters)
- 1 tablespoon (15 ml) cornstarch (8 grams)
- 2 tablespoons (30 ml) water (30 milliliters)
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and minced garlic to the skillet.
- Sauté until the onion is translucent, about 3-4 minutes.
- Add ground beef to the skillet and cook until browned.
- Stir in chopped bell pepper and sliced zucchini.
- Cook for 5 minutes, stirring occasionally.
- Add sliced mushrooms to the skillet.
- Season with dried oregano, dried basil, salt, and pepper.
- Stir in the marinara sauce and mix well.
- Simmer the mixture for 5 minutes.
- Transfer the meat and veggie mixture to a baking dish.
- In a small bowl, whisk together heavy cream and cornstarch.
- Add 2 tablespoons of water to the cream mixture and stir.
- Pour the creamy mixture over the meat and veggies in the dish.
- Sprinkle shredded mozzarella and cheddar cheeses evenly on top.
- Bake in the preheated oven for 20-25 minutes.
- Remove from the oven when the cheese is melted and bubbly.
- Allow to cool for a few minutes before serving.
