Description
A cozy, creamy soup filled with ground beef, potatoes, and sharp cheddar cheese, perfect for chilly evenings.
Ingredients
Scale
- 1 lb ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups potatoes, peeled and diced
- 4 cups chicken broth
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1 cup heavy cream
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sautéing until softened, about 3-4 minutes.
- Add ground beef, breaking it into smaller pieces as it cooks until browned. Drain excess grease.
- Stir in diced potatoes and chicken broth, bringing to a boil. Once boiling, reduce heat and simmer for 15-20 minutes until potatoes are fork-tender.
- Pour in the milk and heavy cream, stirring well to combine and gently heat through.
- Gradually mix in shredded cheddar cheese, stirring until melted and smooth.
- Season with salt and pepper to taste, then let simmer for an additional 5-10 minutes.
- Ladle into bowls and serve hot, garnished with more cheese, bacon bits, or green onions if desired.
Notes
For added flavor, consider herbs like thyme or parsley. For a spicy kick, add red pepper flakes during cooking.
