- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried Italian herbs (like basil, oregano, or thyme)
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the mixed vegetables, olive oil, garlic, salt, pepper, and Italian herbs. Toss until the vegetables are well coated.
- Spread the vegetable mixture on a baking sheet in a single layer.
- Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly browned.
- Remove from the oven and sprinkle the shredded cheese over the top. Return to the oven and bake for an additional 5-10 minutes, until the cheese is melted and bubbly.
- Optional: Sprinkle with grated Parmesan cheese before serving.
