Description

A comforting cheesy meatloaf casserole combining classic meatloaf elements with gooey cheese and fresh vegetables.


Ingredients

  • 1 lb ground beef
  • 1 cup breadcrumbs
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup onion, chopped
  • 1/2 cup bell pepper, chopped
  • 2 eggs
  • 1 cup marinara sauce
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the ground beef, breadcrumbs, shredded cheese, onion, bell pepper, eggs, salt, and pepper until well combined.
  3. Spray a casserole dish with cooking spray and transfer the meat mixture into the dish, shaping it into a loaf.
  4. Pour marinara sauce over the top of the meatloaf.
  5. Bake in the preheated oven for 45-60 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (70°C).
  6. Let it cool for a few minutes before slicing and serving.

Notes

Letting the meatloaf rest after baking helps keep it moist and improves texture.
