  • 2/3 cup white granulated sugar
  • 1/4 cup corn starch
  • 2/3 cup all-purpose flour
  • 1/4 cup white granulated sugar (for crumb topping)
  • 1/3 cup light brown sugar
  • 4 tablespoons unsalted butter
  • A pinch of salt

Instructions

  1. Preheat oven to 425°F.
  2. Mix cherries with vanilla extract, almond extract, 2/3 cup granulated sugar, corn starch, and let sit for 5-10 minutes.
  3. In another bowl, combine 2/3 cup flour, 1/4 cup granulated sugar, and 1/3 cup brown sugar for the crumble.
  4. Add cold butter to crumb mixture and pinch together to create a sandy texture.
  5. Transfer the cherry mixture to the pie crust, leaving excess liquid behind.
  6. Spread cherries evenly and sprinkle crumb topping over.
  7. Bake at 425°F for 20 minutes, then reduce heat to 375°F and bake for an additional 35-40 minutes.
  8. Let cool for 20-30 minutes before serving.
