- 1 lb chicken thighs, boneless and skinless
- 1 lb andouille sausage, sliced
- 1 large onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 4 cloves of garlic, minced
- 4 cups chicken broth
- 1 can diced tomatoes (14 oz)
- 2 tablespoons Cajun seasoning
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 2 bay leaves
- Salt and pepper to taste
- 4 cups cooked rice (for serving)
- Chopped green onions (for garnish)
- Fresh parsley (for garnish)
Instructions
- In a large pot, begin by browning the sausage over medium heat. Once browned, remove it and set it aside.
- In the same pot, add the chicken. Cook until it is browned on all sides. After browning, remove the chicken and set it alongside the sausage.
- With the pot still warm, add the chopped onion, bell pepper, celery, and minced garlic. Sauté until the vegetables soften and become fragrant.
- Stir in the Cajun seasoning, paprika, and dried thyme. Allow the spices to release their aroma by cooking for about a minute.
- Return both the sausage and chicken to the pot. Next, add the diced tomatoes and chicken broth, along with the bay leaves. Bring the mixture to a boil.
- Reduce the heat, cover the pot, and let it simmer for an hour to allow flavors to meld beautifully.
- Before serving, season with salt and pepper to taste.
- Serve your gumbo over cooked rice and garnish it with green onions and parsley for a bright, fresh touch.
Notes
Let the gumbo rest for a few minutes to develop even more flavor. Store leftovers in an airtight container in the refrigerator for up to three days.
