Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 1 lb andouille sausage, sliced
  • 1 large onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 4 cloves of garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes (14 oz)
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 4 cups cooked rice (for serving)
  • Chopped green onions (for garnish)
  • Fresh parsley (for garnish)

Instructions

  1. In a large pot, begin by browning the sausage over medium heat. Once browned, remove it and set it aside.
  2. In the same pot, add the chicken. Cook until it is browned on all sides. After browning, remove the chicken and set it alongside the sausage.
  3. With the pot still warm, add the chopped onion, bell pepper, celery, and minced garlic. Sauté until the vegetables soften and become fragrant.
  4. Stir in the Cajun seasoning, paprika, and dried thyme. Allow the spices to release their aroma by cooking for about a minute.
  5. Return both the sausage and chicken to the pot. Next, add the diced tomatoes and chicken broth, along with the bay leaves. Bring the mixture to a boil.
  6. Reduce the heat, cover the pot, and let it simmer for an hour to allow flavors to meld beautifully.
  7. Before serving, season with salt and pepper to taste.
  8. Serve your gumbo over cooked rice and garnish it with green onions and parsley for a bright, fresh touch.

Notes

Let the gumbo rest for a few minutes to develop even more flavor. Store leftovers in an airtight container in the refrigerator for up to three days.
