Ingredients

  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 pound chicken breast, diced
  • 2 cups cabbage, chopped
  • 1 bell pepper, sliced (any color)
  • 1 carrot, julienned
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tsp sesame oil
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/4 tsp crushed red pepper flakes (optional)
  • 1 tsp cornstarch mixed with 2 tbsp water (optional, for thickening)
  • Green onions for garnish

Instructions

  1. Marinate the chicken: In a small bowl, combine 1 tablespoon of soy sauce, 1 teaspoon of sesame oil, and a pinch of black pepper. Toss the diced chicken breast in the marinade and let it sit for 10–15 minutes.
  2. Prepare the sauce: In another bowl, whisk together the remaining 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce (if using), 1/2 teaspoon of black pepper, 1/2 teaspoon salt, 1/4 teaspoon crushed red pepper flakes (if desired), and the cornstarch slurry (1 teaspoon cornstarch mixed with 2 tablespoons water). Set aside.
  3. Cook the chicken: Heat a large skillet or wok over medium-high heat. Melt the butter and add the marinated chicken, stirring for about 4–5 minutes until golden brown and fully cooked. Remove from the skillet and set aside.
  4. Sauté the aromatics: In the same skillet, add a bit more butter if needed and sauté the sliced onion and minced garlic until fragrant, about 2 minutes.
  5. Cook the vegetables: Add chopped cabbage, sliced bell pepper, and julienned carrot. Stir-fry for 5–6 minutes until tender but still crisp.
  6. Combine and add the sauce: Return the cooked chicken to the skillet and pour in the prepared sauce, stirring well. Cook for an additional 2–3 minutes to thicken the sauce and blend the flavors.
  7. Serve hot and enjoy!

Notes

For added flavor, customize the seasoning with more soy sauce or spice it up! Store leftovers in an airtight container for up to three days.
