Ingredients

  • 1.5 lbs boneless chicken thighs
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 can (14 oz) diced tomatoes
  • 1 can (13.5 oz) full-fat coconut milk
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Prepare your ingredients by chopping the onion, garlic, and ginger.
  2. In a large pan over medium heat, add oil and sauté the onion until translucent.
  3. Add garlic and ginger; cook until fragrant.
  4. Add chicken thighs and brown on all sides for about 5 minutes.
  5. Stir in curry powder, salt, and pepper; cook for another 2 minutes.
  6. Pour in diced tomatoes and coconut milk; stir well and bring to a simmer.
  7. Let it bubble gently for about 20 minutes until thickened.
  8. Garnish with fresh cilantro and serve over rice or with naan.
