- 1 lb boneless, skinless chicken (diced)
- 4 cups chicken broth
- 2 cups egg noodles
- 1 onion (diced)
- 2 carrots (sliced)
- 2 celery stalks (sliced)
- 2 cloves garlic (minced)
- 1 teaspoon fresh thyme (or 1/2 teaspoon dried)
- 1 teaspoon fresh parsley (chopped)
- Salt and pepper to taste
- Juice of 1 lemon
Instructions
- In a large pot, heat a bit of oil over medium heat. Add the onion, carrots, and celery, and sauté until softened, around 5-7 minutes.
- Add the garlic and sauté for another minute.
- Pour in the chicken broth and bring it to a boil.
- Add the diced chicken and thyme; cook until the chicken is fully cooked, approximately 10 minutes.
- Stir in the egg noodles and cook according to package instructions.
- Add fresh parsley, salt, and pepper to taste.
- Just before serving, squeeze lemon juice for a burst of freshness.
- Serve hot and enjoy!
Notes
For a richer flavor, consider using homemade chicken broth. Adjust the seasoning to taste and add fresh herbs at the end for maximum freshness.
