Ingredients

  • 1 lb boneless, skinless chicken (diced)
  • 4 cups chicken broth
  • 2 cups egg noodles
  • 1 onion (diced)
  • 2 carrots (sliced)
  • 2 celery stalks (sliced)
  • 2 cloves garlic (minced)
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried)
  • 1 teaspoon fresh parsley (chopped)
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. In a large pot, heat a bit of oil over medium heat. Add the onion, carrots, and celery, and sauté until softened, around 5-7 minutes.
  2. Add the garlic and sauté for another minute.
  3. Pour in the chicken broth and bring it to a boil.
  4. Add the diced chicken and thyme; cook until the chicken is fully cooked, approximately 10 minutes.
  5. Stir in the egg noodles and cook according to package instructions.
  6. Add fresh parsley, salt, and pepper to taste.
  7. Just before serving, squeeze lemon juice for a burst of freshness.
  8. Serve hot and enjoy!
