- 1 tbsp (15 ml) olive oil to marinate the chicken, plus more for frying
- 1 tbsp (15 ml) butter
- 2 boneless skinless chicken breast sliced into 4 thin pieces
- 7 oz (198 g) rigatoni or your choice of pasta
- 1 1/2 tbsp (23 ml) cajun seasoning divided
- 3 cloves garlic minced
- 1/2 onion sliced
- 1/2 red bell pepper sliced
- 1/2 cup (120 ml) tomato sauce or crushed tomatoes
- 1 cup (240 ml) heavy cream
- 1/2 cup (120 ml) pasta water
- 1/4 cup (60 ml) grated cheese
- Chili flakes and parsley optional , for garnish
Instructions
- In a medium-sized bowl, combine the chicken with olive oil and 1 tablespoon of Cajun seasoning. Rub the mixture onto the chicken until it’s evenly coated, then set it aside while you prepare the other components.
- Boil the pasta until it’s just slightly undercooked, saving about a cup of the cooking liquid. As the pasta cooks, warm a skillet over medium heat, add a little oil, and cook the chicken for approximately 2-3 minutes on each side.
- Using the same skillet, melt the butter and sauté the onion and garlic, then add the bell pepper. Pour in the tomato sauce, heavy cream, half a cup of the pasta water, and the remaining half tablespoon of Cajun seasoning.
- Let the sauce simmer for around 2-3 minutes until it thickens. Mix in the pasta and half of the chicken, cut into small pieces. Cook for another 1-2 minutes until the pasta is fully cooked, then sprinkle with grated cheese and adjust seasoning with salt as needed.
- Plate the pasta, topping each serving with the rest of the chicken pieces, and finish with a sprinkle of chili flakes and parsley for garnish. Enjoy your meal!
