  • 1 tbsp (15 ml) olive oil to marinate the chicken, plus more for frying
  • 1 tbsp (15 ml) butter
  • 2 boneless skinless chicken breast sliced into 4 thin pieces
  • 7 oz (198 g) rigatoni or your choice of pasta
  • 1 1/2 tbsp (23 ml) cajun seasoning divided
  • 3 cloves garlic minced
  • 1/2 onion sliced
  • 1/2 red bell pepper sliced
  • 1/2 cup (120 ml) tomato sauce or crushed tomatoes
  • 1 cup (240 ml) heavy cream
  • 1/2 cup (120 ml) pasta water
  • 1/4 cup (60 ml) grated cheese
  • Chili flakes and parsley optional , for garnish

Instructions

  1. In a medium-sized bowl, combine the chicken with olive oil and 1 tablespoon of Cajun seasoning. Rub the mixture onto the chicken until it’s evenly coated, then set it aside while you prepare the other components.
  2. Boil the pasta until it’s just slightly undercooked, saving about a cup of the cooking liquid. As the pasta cooks, warm a skillet over medium heat, add a little oil, and cook the chicken for approximately 2-3 minutes on each side.
  3. Using the same skillet, melt the butter and sauté the onion and garlic, then add the bell pepper. Pour in the tomato sauce, heavy cream, half a cup of the pasta water, and the remaining half tablespoon of Cajun seasoning.
  4. Let the sauce simmer for around 2-3 minutes until it thickens. Mix in the pasta and half of the chicken, cut into small pieces. Cook for another 1-2 minutes until the pasta is fully cooked, then sprinkle with grated cheese and adjust seasoning with salt as needed.
  5. Plate the pasta, topping each serving with the rest of the chicken pieces, and finish with a sprinkle of chili flakes and parsley for garnish. Enjoy your meal!
