- 454 g boneless, skinless chicken breast – cubed (1 lb)
- 240 ml sliced carrots (1 cup)
- 240 ml frozen green peas (1 cup)
- 120 ml sliced celery (1/2 cup)
- 80 g vegetable oil (1/3 cup)
- 80 g chopped onion (1/2 cup)
- 80 g all-purpose flour (2/3 cup)
- 5 ml salt (1/2 tsp)
- 25 ml black pepper (1/4 tsp)
- 25 ml celery seed (1/4 tsp)
- 415 ml chicken broth (1 3/4 cups)
- 160 ml milk (2/3 cup)
- 2 (9 inch) unbaked pie crusts
Instructions
- Collect all necessary components and set the oven to 425 degrees F (220 degrees C) to preheat.
- Place the diced chicken, carrot slices, frozen peas, and celery in a pot; fill with water until covered and bring to a boil. Let it boil for 15 minutes, then take it off the heat and strain the water.
- As the chicken cooks, heat vegetable oil in a different pot over medium heat. Add chopped onion and sauté until it becomes soft and transparent, around 5 to 7 minutes. Mix in flour, salt, black pepper, and celery seed.
- Gradually incorporate chicken broth and milk, stirring continuously.
- Lower the heat to medium-low and let it simmer until the mixture thickens, roughly 5 to 10 minutes. Remove from heat and let it rest.
- Arrange the cooked chicken and vegetables in the base pie crust. Pour the hot broth mixture over them.
- Lay the second pie crust on top, seal the edges, and trim any extra dough. Cut several small openings in the top crust to let steam out.
- Place in the preheated oven and bake until the pastry is golden and the filling is bubbling, about 30 to 35 minutes. Allow it to cool for 10 minutes before serving.
