Instructions
- In a large pot, heat olive oil over medium heat.
- Add smoky bacon and cook until crisp, then remove and set aside.

- Add chopped carrots, potatoes, and the bacon back to the pot.
- Pour in the chicken broth, add thyme, bay leaves, salt, and pepper.

- Remove bay leaves before serving.
