Ingredients

  • Chicken thighs or breasts
  • Carrots
  • Potatoes
  • Smoky bacon
  • Onion
  • Garlic
  • Chicken broth
  • Thyme
  • Bay leaves
  • Salt
  • Pepper

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add smoky bacon and cook until crisp, then remove and set aside.
  3. In the same pot, add chopped onions and garlic, sauté until fragrant.
  4. Add chicken pieces and cook until browned on all sides.
  5. Add chopped carrots, potatoes, and the bacon back to the pot.
  6. Pour in the chicken broth, add thyme, bay leaves, salt, and pepper.
  7. Bring to a boil, then reduce heat and simmer for about 30-40 minutes until the chicken is tender.
  8. Remove bay leaves before serving.
