Instructions
- Cut chicken into bite-sized pieces, seasoning it with salt and pepper.
- In a large pot, heat olive oil over medium heat. Sauté the diced onion, carrots, and celery for about five minutes until tender.
- Add minced garlic, cooking for one more minute until it releases its fragrance.
- Pour in the chicken broth and add the seasoned chicken, bay leaves, and dried thyme. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.
- Stir in the cheese tortellini, cooking according to the package directions—typically about 5 to 7 minutes—until tender.
- Remove the bay leaves, season the soup to taste with additional salt and pepper, and stir in the freshly chopped parsley.
- Serve hot, adding extra parsley if desired.
