- 8 ripe peaches (yellow flesh preferred) (about 1 kg)
- 150 g container unsweetened vanilla yogurt (I use So’s coconut yogurt)
- 1 can coconut cream (400 ml)
- juice from 1 lime
- 1-inch piece fresh ginger
- 1 Tbsp. almond extract (or 10 ml almond extract)
- 1/8 tsp (1 ml). salt
- chopped mint to garnish-optional
- extra peaches, chopped, to garnish-optional
Instructions
- Puree the initial set of seven components together; this almost fills our 68 oz. blender, so you may need to process in parts to complete the entire recipe.
- Refrigerate for a minimum of one hour to let the flavors blend harmoniously.
- Present by adding mint and chopped peaches on top if you wish!
