  • 150 g container unsweetened vanilla yogurt (I use So’s coconut yogurt)
  • 1 can coconut cream (400 ml)
  • juice from 1 lime
  • 1-inch piece fresh ginger
  • 1 Tbsp. almond extract (or 10 ml almond extract)
  • 1/8 tsp (1 ml). salt
  • chopped mint to garnish-optional
  • extra peaches, chopped, to garnish-optional

Instructions

  1. Puree the initial set of seven components together; this almost fills our 68 oz. blender, so you may need to process in parts to complete the entire recipe.
  2. Refrigerate for a minimum of one hour to let the flavors blend harmoniously.
  3. Present by adding mint and chopped peaches on top if you wish!

  • Use ripe yellow peaches for optimal flavor and sweetness.
  • Chill the mixture for at least an hour to intensify the flavors.
