  • 2 tablespoon s adobo sauce from canned chipotle peppers (30 ml)
  • 1 chipotle pepper in adobo sauce, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin (5 g)
  • 1 teaspoon smoked paprika (5 g)
  • 1 teaspoon salt (5 g)
  • 1/2 teaspoon black pepper (1 g)

Instructions

  1. In a medium bowl, combine olive oil, honey, soy sauce, lime juice, and adobo sauce.
  2. Add chopped chipotle pepper and minced garlic to the bowl.
  3. Stir in ground cumin, smoked paprika, salt, and black pepper.
  4. Mix all ingredients thoroughly to form the marinade.
  5. Place the venison backstrap in a large resealable plastic bag.
  6. Pour the marinade over the venison in the bag.
  7. Seal the bag, removing as much air as possible, and massage to coat the meat.
