Ingredients

Scale
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ¼ tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup packed brown sugar
  • ¼ cup granulated sugar
  • 2 tbsp milk or cream
  • 1 tsp vanilla extract
  • 1 ¼ cups all-purpose flour (heat-treated)
  • 1 cup mini chocolate chips
  • 2 cups semi-sweet chocolate chips or candy melts
  • 1 tbsp coconut oil (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. Whisk together melted butter and granulated sugar until fully combined.
  3. Add eggs and vanilla, mixing until smooth.
  4. Incorporate cocoa powder, flour, baking powder, and salt until just combined.
  5. Spread the mixture evenly into the prepared pan and bake for 20-25 minutes.
  6. Allow the brownies to cool completely.
  7. Beat the softened butter, brown sugar, and granulated sugar together until light and fluffy.
  8. Add milk and vanilla and mix well.
  9. Gradually add heat-treated flour until fully incorporated, then fold in mini chocolate chips.
  10. Roll the dough into 1-inch balls and refrigerate until firm.
  11. Cut the cooled brownies into squares slightly larger than the cookie dough balls.
  12. Flatten a brownie square in your palm and place a cookie dough ball in the center.
  13. Wrap the brownie around the cookie dough, sealing the edges.
  14. Melt chocolate chips or candy melts in a microwave-safe bowl and dip each brownie bite.
  15. Allow bites to refrigerate for 15 minutes until the chocolate is set.
  16. Enjoy chilled or at room temperature.

Notes

Use parchment paper for easier removal of brownies and consider chilling the cookie dough to maintain its shape during assembly.
