Chocolate Strawberry Yogurt Clusters

Delightful chocolate-covered yogurt clusters filled with fresh strawberries, perfect for a sweet yet healthy snack.


Ingredients

  • 1 1/2 cups chopped strawberries
  • 1 cup plain Greek yogurt
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 2 tbsp coconut oil

Instructions

  1. Add the chopped strawberries, plain Greek yogurt, honey, and vanilla extract to a large bowl. Combine thoroughly.
  2. Scoop around 2 tablespoons of the yogurt mixture onto a parchment paper lined baking sheet to form about ten clusters.
  3. Place the baking sheet with the yogurt clusters in the freezer for 1-2 hours until completely frozen and solid.
  4. In a microwave-safe bowl, melt the chocolate chips and coconut oil in 15 or 30-second intervals, stirring in between until smooth.
  5. Remove the frozen yogurt clusters from the freezer and dip each one into the melted chocolate, ensuring thorough coating.
  6. Place each cluster back on the prepared baking sheet and add a sprinkle of sea salt if desired.
  7. Place the clusters back in the freezer for a few minutes to harden the chocolate.

Notes

Experiment by adding cinnamon or nut butter to the yogurt mixture for added flavor. You can also substitute strawberries with blueberries or raspberries.
