  • Coconut cream – 1 cup (240 ml)
  • Maple syrup – 2 tablespoons (30 ml)
  • Salt – 1 teaspoon (5 g)
  • Black pepper – 1/2 teaspoon (2.5 g)
  • Vegetable oil – 2 tablespoons (30 ml)
  • Garlic, minced – 2 cloves
  • Lemon juice – 1 tablespoon (15 ml)
  • Fresh parsley, chopped – 1/4 cup (15 g)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Butterfly each chicken breast, making sure not to cut all the way through.
  3. Season the chicken breasts with salt and black pepper on both sides.
  4. In a bowl, mix the cream cheese and mixed berries until well combined.
  5. Add 1 tablespoon of minced garlic to the cream cheese mixture and mix thoroughly.
  6. Stuff each chicken breast with the cream cheese and berry mixture, then secure with toothpicks.
  7. Heat olive oil in an oven-safe skillet over medium heat.
  8. Add the remaining minced garlic and sautƩ until fragrant.
  9. Sear the stuffed chicken breasts in the skillet for 3-4 minutes per side until golden brown.
  10. Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken is cooked through.
  11. In a blender, combine chipotle peppers, heavy cream, honey, lime juice, and a pinch of salt.
  12. Blend until smooth and creamy.
  13. Pour the chipotle cream sauce into a saucepan and heat over low heat, stirring occasionally.
  14. Remove the chicken from the oven and let rest for 5 minutes.
  15. Serve the stuffed chicken breasts drizzled with the chipotle cream sauce.
  16. Garnish with chopped fresh cilantro before serving.
