Instructions
- Preheat the oven to 375°F (190°C).
- Butterfly each chicken breast, making sure not to cut all the way through.
- Season the chicken breasts with salt and black pepper on both sides.
- In a bowl, mix the cream cheese and mixed berries until well combined.
- Add 1 tablespoon of minced garlic to the cream cheese mixture and mix thoroughly.
- Stuff each chicken breast with the cream cheese and berry mixture, then secure with toothpicks.
- Heat olive oil in an oven-safe skillet over medium heat.
- Add the remaining minced garlic and sautƩ until fragrant.
- Sear the stuffed chicken breasts in the skillet for 3-4 minutes per side until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken is cooked through.
- In a blender, combine chipotle peppers, heavy cream, honey, lime juice, and a pinch of salt.
- Blend until smooth and creamy.
- Pour the chipotle cream sauce into a saucepan and heat over low heat, stirring occasionally.
- Remove the chicken from the oven and let rest for 5 minutes.
- Serve the stuffed chicken breasts drizzled with the chipotle cream sauce.
- Garnish with chopped fresh cilantro before serving.
