Ingredients

  • 8 oz bow tie pasta
  • 1 cup corn kernels (fresh off the cob)
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, finely chopped
  • 1 cup fresh cilantro, chopped
  • 1 avocado, diced
  • 1/2 cup cotija cheese (optional)
  • 1 cup plain Greek yogurt
  • 1/4 cup fresh lime juice
  • 1 garlic clove, minced
  • Salt, to taste
  • Cayenne, to taste

Instructions

  1. Cook the bow tie pasta according to package instructions until al dente, then drain and cool.
  2. Prepare the corn by removing kernels from the cob and chop cherry tomatoes and red onion.
  3. In a large bowl, combine the cooled pasta, corn, tomatoes, red onion, cilantro, and avocado.
  4. In a separate bowl, mix together Greek yogurt, lime juice, garlic, salt, and cayenne to create the dressing.
  5. Pour the dressing over the salad and gently toss to combine, being careful not to break the avocado.
  6. Let the salad sit in the fridge for at least one hour to let flavors meld, then serve with an additional sprinkle of cotija cheese if desired.

Notes
