Ingredients

  • 1 garlic clove (minced)
  • 1/4 tsp salt
  • 2 tbsp balsamic vinegar
  • 1/4 cup olive oil (extra virgin for best flavor)
  • 1 tsp dijon mustard
  • Pepper to taste (freshly ground preferred)
  • 4 cups baby spinach
  • 1/2 cup sun-dried tomatoes (packed in oil preferred)
  • 1/2 lb orzo
  • 2 oz feta (crumbled)

Instructions

  1. Cook the orzo according to package instructions. Once tender, drain and set aside to cool.
  2. In a small bowl, whisk together the minced garlic, salt, balsamic vinegar, olive oil, dijon mustard, and pepper until the dressing emulsifies.
  3. In a large mixing bowl, combine the cooled orzo, baby spinach, and sun-dried tomatoes. Pour the dressing over and toss gently to coat.
  4. Add the crumbled feta cheese and carefully fold it into the salad.
  5. Taste and adjust seasoning with salt and pepper as desired.

Notes
