Ingredients

Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and bell pepper, cooking until softened, about 5 minutes.
- Stir in the garlic and cook for another minute.
- Add the diced tomatoes, chicken broth, chili powder, cumin, shredded chicken, corn, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
