Ingredients

  • 1 pound cooked chicken, shredded
  • 1 cup corn

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and bell pepper, cooking until softened, about 5 minutes.
  3. Stir in the garlic and cook for another minute.
  4. Add the diced tomatoes, chicken broth, chili powder, cumin, shredded chicken, corn, salt, and pepper.
  5. Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
