Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch pan or line it with parchment paper.
- Prepare the cinnamon filling by mixing ¾ cup light brown sugar, 2 tablespoons all-purpose flour, and 1 tablespoon ground cinnamon in a small bowl until well combined.
- Create the streusel by combining ⅔ cup all-purpose flour, ½ cup light brown sugar, 1 teaspoon ground cinnamon, and ¼ teaspoon salt in another bowl. Cut in ½ cup cold, cubed unsalted butter until the mixture resembles coarse crumbs. Chill it while you continue.
- In a separate bowl, mix the dry ingredients: 2 cups all-purpose flour, ½ teaspoon salt, and 2 teaspoons baking powder.
- In a large mixing bowl, cream together ½ cup softened unsalted butter, ½ cup granulated sugar, and ½ cup light brown sugar until light and fluffy. Beat in 2 large eggs, one at a time. Stir in 1 cup sour cream and 1½ teaspoons vanilla extract until well combined.
- Gradually incorporate the dry ingredients, mixing gently until just combined.
- Spread half of the batter into the prepared pan. Sprinkle the cinnamon filling evenly over the batter, then spread the remaining batter on top. Finish by sprinkling the chilled streusel over the top layer of batter.
- Bake for 45–50 minutes, or until a toothpick inserted in the center comes out mostly clean.
- Allow the cake to cool for 30 minutes. Mix powdered sugar with milk and vanilla extract for a glaze, if desired, and drizzle over the coffee cake before serving.
Notes
For a beautiful presentation, cut into squares and dust with powdered sugar. Serve alongside fresh fruit or whipped cream.
