Ingredients

  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 4 ounces egg noodles
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Stir in minced garlic and grated ginger, cooking for another minute until fragrant.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add shredded chicken, sliced carrots, and celery.
  6. Cook until the vegetables are tender, about 10 minutes.
  7. Add the egg noodles and cook according to package instructions.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with fresh parsley.
