- 1 tsp Thyme (fresh preferred)

Instructions
- Heat 2 tablespoons of olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
- Stir in the fresh mushrooms, cooking until they start to brown and soften.
- Pour in the vegetable broth, bringing it to a gentle simmer.
- Add the shredded rotisserie chicken and thyme, mixing well.
- Pour in the heavy cream, stirring until combined. Season with salt and pepper to taste.
- Allow the soup to simmer for a few more minutes to meld the flavors.
- Serve the soup hot, garnished with additional thyme if desired.
