  • 8 oz Fresh Mushrooms (button or cremini)
  • 1 medium Onion (chopped)
  • 3 cloves Garlic (minced)
  • 1 cup Heavy Cream (can be substituted with half-and-half or plant-based cream)
  • 1 tsp Thyme (fresh preferred)
  • To taste Salt
  • To taste Pepper
  • 2 tbsp Olive Oil (can be replaced with butter)

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
  3. Stir in the fresh mushrooms, cooking until they start to brown and soften.
  4. Pour in the vegetable broth, bringing it to a gentle simmer.
  5. Add the shredded rotisserie chicken and thyme, mixing well.
  6. Pour in the heavy cream, stirring until combined. Season with salt and pepper to taste.
  7. Allow the soup to simmer for a few more minutes to meld the flavors.
  8. Serve the soup hot, garnished with additional thyme if desired.
