  • 2 cloves garlic, minced
  • 1 tablespoon (15 ml) (15 grams) ginger, grated
  • 1 tablespoon (15 ml) (15 grams) curry powder
  • 1 teaspoon (5 ml) (5 grams) ground cumin
  • 1 teaspoon (5 ml) (5 grams) ground coriander
  • 1/4 teaspoon (1 ml) (1.25 grams) ground black pepper (optional)
  • 1 can (14 ounces / 400 ml) coconut milk
  • 1 tablespoon (15 ml) soy sauce
  • 1 tablespoon (15 ml) (15 grams) brown sugar
  • 1 red bell pepper, sliced
  • 1 cup (240 ml) (150 grams) snap peas or green beans
  • Salt, to taste
  • 2 tablespoons (30 ml) lime juice
  • Fresh cilantro, for garnish

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the chopped onion and sauté until soft, about 3-4 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for 1 minute.
  4. Add the curry powder, ground cumin, ground coriander, and cayenne pepper. Cook for 1 minute, stirring constantly.
  5. Pour in the coconut milk, stirring to combine with the spices.
  6. Add the fish sauce, soy sauce, and brown sugar. Stir well.
  7. Bring the mixture to a gentle simmer over low heat.
  8. Add the sliced red bell pepper and snap peas or green beans to the pan.
  9. Simmer the vegetables for about 5 minutes, until they start to soften.
  10. Add the shrimp to the pan, stirring to coat them in the sauce.
  11. Cook the shrimp for 3-5 minutes, until they are pink and cooked through.
  12. Add salt to taste and stir in the lime juice.
  13. Remove from heat and garnish with fresh cilantro before serving.
