- 1 tablespoon (15 ml) vegetable oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon (15 ml) (15 grams) ginger, grated
- 1 tablespoon (15 ml) (15 grams) curry powder
- 1 teaspoon (5 ml) (5 grams) ground cumin
- 1 teaspoon (5 ml) (5 grams) ground coriander
- 1/4 teaspoon (1 ml) (1.25 grams) ground black pepper (optional)
- 1 can (14 ounces / 400 ml) coconut milk
- 1 tablespoon (15 ml) soy sauce
- 1 tablespoon (15 ml) (15 grams) brown sugar
- 1 red bell pepper, sliced
- 1 cup (240 ml) (150 grams) snap peas or green beans
- Salt, to taste
- 2 tablespoons (30 ml) lime juice
- Fresh cilantro, for garnish
Instructions
- Heat the vegetable oil in a large pan over medium heat.
- Add the chopped onion and sauté until soft, about 3-4 minutes.
- Stir in the minced garlic and grated ginger, cooking for 1 minute.
- Add the curry powder, ground cumin, ground coriander, and cayenne pepper. Cook for 1 minute, stirring constantly.
- Pour in the coconut milk, stirring to combine with the spices.
- Add the fish sauce, soy sauce, and brown sugar. Stir well.
- Bring the mixture to a gentle simmer over low heat.
- Add the sliced red bell pepper and snap peas or green beans to the pan.
- Simmer the vegetables for about 5 minutes, until they start to soften.
- Add the shrimp to the pan, stirring to coat them in the sauce.
- Cook the shrimp for 3-5 minutes, until they are pink and cooked through.
- Add salt to taste and stir in the lime juice.
- Remove from heat and garnish with fresh cilantro before serving.
