Ingredients
- – 1 1/2 cups fine yellow cornmeal (220g)
- – 3/4 cup all-purpose flour (90g)
- – 1/4 cup granulated sugar (50g)
- – 2 teaspoons (10 ml) baking powder
- – 2 teaspoons (10 ml) kosher salt
- – 1 1/2 cups whole milk (360ml)
- – 1/4 cup (60 ml) vegetable oil
- – 1 large egg
Instructions
- Set your oven to reach a temperature of 425°F.
- In a sizable mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt using a whisk. In another bowl, blend the milk, vegetable oil, and egg by whisking them together.
- Once the oven reaches the desired temperature, pour the vegetable oil into a 9-inch round baking dish or cast-iron skillet and let it heat in the oven for 5 minutes.
- After the dish has warmed for 5 minutes, create a hollow in the middle of the dry ingredients. Pour the milk mixture into this hollow, stirring just enough to combine everything. Carefully take the hot dish out of the oven, and immediately pour in the batter. It should make a sizzling sound!
- Place it back in the oven and bake for 18 to 22 minutes, or until a wooden skewer inserted into the center comes out clean. For a crunchy outer layer, turn the cornbread out onto a cooling rack right away. Allow it to cool for 5 to 10 minutes before slicing and serving.
