- 1 pound of fresh sausage (Italian or your choice)
- 1 medium butternut squash, peeled and diced
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 1 cup of shredded cheese (such as mozzarella or cheddar)
- ½ cup of chicken or vegetable broth
- 1 teaspoon of dried thyme
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 375°F (190°C).
- Heat a large skillet over medium heat. Add olive oil and the chopped onion. Sauté until translucent.
- Add minced garlic; cook for an additional minute.
- Incorporate the sausage into the skillet. Brown the sausage until cooked through, breaking it into pieces as you stir.
- Once browned, add the diced butternut squash to the skillet. Sprinkle with thyme, salt, and pepper. Stir to combine.
- Pour the chicken broth over the sausage and squash mixture. Let it simmer for about 5 minutes.
- Transfer the mixture to a greased casserole dish. Top with shredded cheese.
- Bake in the oven for 30-35 minutes, or until the squash is tender, and the cheese is bubbly and golden brown.
Notes
For added flavor, try using a blend of cheeses and spices like nutmeg or smoked paprika.
