  • 1 medium butternut squash, peeled and diced

  • 2 cloves of garlic, minced
  • 1 cup of shredded cheese (such as mozzarella or cheddar)
  • ½ cup of chicken or vegetable broth
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat a large skillet over medium heat. Add olive oil and the chopped onion. Sauté until translucent.
  3. Add minced garlic; cook for an additional minute.
  4. Incorporate the sausage into the skillet. Brown the sausage until cooked through, breaking it into pieces as you stir.
  5. Once browned, add the diced butternut squash to the skillet. Sprinkle with thyme, salt, and pepper. Stir to combine.
  6. Pour the chicken broth over the sausage and squash mixture. Let it simmer for about 5 minutes.
  7. Transfer the mixture to a greased casserole dish. Top with shredded cheese.
  8. Bake in the oven for 30-35 minutes, or until the squash is tender, and the cheese is bubbly and golden brown.
