  • 12 oz turkey sausage or chicken sausage, sliced
  • 1 medium onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 3 (15 oz) cans of white beans (cannellini or great northern), drained and rinsed
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • ½ cup heavy cream (optional)
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté the chopped onion until translucent, then add the carrots, celery, and minced garlic, allowing them to soften.
  3. Add the sliced sausage, allowing it to brown slightly.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add the drained white beans, smoked paprika, thyme, and bay leaf. Season with salt and pepper to taste.
  6. Let the soup simmer for about 20 minutes.
  7. Remove the bay leaf and blend part of the soup for a creamy texture, adjusting with more chicken broth if necessary.
  8. Stir in the heavy cream if using, and garnish with fresh chopped parsley before serving hot.

Notes

Feel free to adjust the cream and seasonings based on your preference; adding lemon juice before serving can brighten the flavors.
