- 12 oz turkey sausage or chicken sausage, sliced
- 1 medium onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 3 (15 oz) cans of white beans (cannellini or great northern), drained and rinsed
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1 bay leaf
- ½ cup heavy cream (optional)
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté the chopped onion until translucent, then add the carrots, celery, and minced garlic, allowing them to soften.
- Add the sliced sausage, allowing it to brown slightly.
- Pour in the chicken broth and bring to a simmer.
- Add the drained white beans, smoked paprika, thyme, and bay leaf. Season with salt and pepper to taste.
- Let the soup simmer for about 20 minutes.
- Remove the bay leaf and blend part of the soup for a creamy texture, adjusting with more chicken broth if necessary.
- Stir in the heavy cream if using, and garnish with fresh chopped parsley before serving hot.
Notes
Feel free to adjust the cream and seasonings based on your preference; adding lemon juice before serving can brighten the flavors.
