Ingredients

  • 2 cups broccoli florets
  • 1 cup uncooked rice
  • 2 cups chicken or vegetable broth
  • 1 cup shredded cheddar cheese
  • 1 cup cream of mushroom soup
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the uncooked rice, broccoli florets, broth, cream of mushroom soup, milk, garlic powder, salt, and pepper. Mix well.
  3. Stir in 1/2 cup of shredded cheddar cheese.
  4. Pour the mixture into a greased 9×13 inch baking dish.
  5. If desired, sprinkle breadcrumbs on top for added crunch.
  6. Cover the dish with foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 15 minutes, or until the casserole is bubbly and the top is golden.
  8. Remove from the oven and let it cool for a few minutes before serving.

Notes

For extra cheesy flavor, consider adding more cheddar cheese before baking. You can also experiment with different cheeses.
