- 10 ounce (283 g) s egg noodles
- 2 tablespoon (30 ml) s vegetable oil
- 1 medium sweet onion, diced
- 2 cloves garlic, minced
- 1 1/2 cup (360 ml) s frozen peas and carrots, thawed
- 1/2 teaspoon (3 ml) kosher salt
- 1/4 teaspoon (1 ml) black pepper
- 2 tablespoon (30 ml) s all-purpose flour
- 1 cup (240 ml) low-sodium chicken broth
- 1 cup (240 ml) heavy cream
- 1 1/2 cup (360 ml) s cooked chicken breast, cut into small cubes
Instructions
- Prepare the egg noodles until they are firm to the bite, following the instructions on the package.
- In a large pan, heat up the vegetable oil over medium-high heat. Add the diced onion, minced garlic, and thawed peas and carrots; sprinkle with kosher salt and black pepper. Cook for approximately 3 minutes, or until the onion becomes soft and see-through. Mix in the all-purpose flour until it is fully incorporated.
- Add the chicken broth and heavy cream, then bring the mixture to a boil. Lower the heat to allow it to simmer. Stir occasionally until it thickens, which should take around 5 minutes.
- Once the pasta is drained, combine it with the mixture in the skillet along with the cubed chicken breast. Taste and adjust seasoning with additional salt and pepper if needed.
- Serve immediately while hot and enjoy!
