- 3 cloves garlic, minced

- 2 cups fresh spinach
- 8 ounces cream cheese, softened
- 1 cup shredded mozzarella cheese, divided
- 1/2 cup Parmesan cheese (optional)
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
- Cut each chicken breast in half horizontally to create four cutlets and pound for even thickness.
- In a bowl, whisk together olive oil, garlic, Italian seasoning, salt, and black pepper; marinate the chicken for 15-30 minutes.
- In a skillet, heat remaining olive oil and cook spinach for 2-3 minutes until wilted; set aside.
- Toss the marinated chicken into the baking dish, then spread the cooked spinach and cream cheese mixture over the top.
- Top with remaining mozzarella cheese.
- Bake in the preheated oven for 20-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and cheese is bubbly and golden.
- Let the casserole rest for 5 minutes before serving.
