- 1 tsp (5 ml) vanilla extract
- 2 tbsp (30 g) coconut yogurt or another plant-based yogurt (such as almond)
- 1 cup (240 ml) almond milk of choice (I like soy for extra protein)* See note below
- 1 tbsp (15 g) coconut yogurt or another plant-based yogurt (such as almond)
- 1/2 tsp (2.5 ml) maple syrup
- 1/2 tsp (2.5 ml) lemon juice
- 1 tsp (5 ml) oat milk or another plant-based milk such as soy or almond
Instructions
- In a medium-sized bowl, combine all the dry ingredients: oats, brown sugar, chia seeds, flaxseed, cinnamon, and a pinch of salt.
- Incorporate the plant-based milk, yogurt, and vanilla extract by stirring with a spoon until everything is well mixed.
- Divide the mixture into two small mason jars. Seal and refrigerate for at least 4 hours or overnight.
- After the oats have set, stir them thoroughly and add additional milk if you prefer a different consistency. To make an optional healthy icing, mix yogurt, lemon juice, maple syrup, and plant-based milk in a small bowl. Drizzle this over your finished cinnamon roll overnight oats and savor!
