Ingredients
- 1 pound lump crab meat
- 1 pound medium shrimp, peeled and deveined (shells reserved)
- 4 tablespoons unsalted butter
- 1 large onion, finely diced
- 2 celery stalks, finely chopped
- 1 carrot, finely diced
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon all-purpose flour
- 4 cups seafood stock (or chicken broth)
- 1 cup heavy cream
- 1/4 cup brandy (optional)
- 1 bay leaf
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- Salt and freshly ground black pepper to taste
- 2 tablespoons fresh chives, finely chopped
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Clean and prepare shrimp, reserving shells. Pick through crab meat for shells.
- In a large pot, melt 3 tablespoons of butter over medium heat. Add onion, celery, and carrot, sautéing for 5-7 minutes until soft.
- Add garlic and cook for 30 seconds until fragrant. Stir in tomato paste and cook for 2 minutes. Sprinkle flour and cook for 1-2 minutes, stirring constantly.
- Gradually whisk in seafood stock. Add bay leaf, thyme, paprika, cayenne, and reserved shrimp shells if using. Bring to a simmer and cook gently for 20 minutes.
- Strain the bisque base through a fine-mesh sieve, pressing on solids. Return liquid to pot over low heat.
- For a smoother texture, blend until smooth with an immersion blender.
- Stir in heavy cream and brandy (if using). Return to a gentle simmer.
- Add shrimp and cook for 2-3 minutes until pink. Gently fold in crab meat and cook for 1-2 additional minutes until heated through.
- Remove from heat and let rest for 5 minutes. Season with salt and pepper to taste.
- Ladle into preheated bowls and garnish with fresh herbs.

This luxurious bisque combines the sweetness of crab meat with the tender texture of shrimp in a velvety, creamy base. For best results, use the freshest seafood available and don’t rush the cooking process. The bisque can be made a day ahead (without seafood) and refrigerated, which actually enhances the flavors. Add the seafood just before serving for optimal texture.
