Ingredients
4 cups diced potatoes
2 cups diced ham
1 small onion, finely chopped
1 can (10.5 oz) cream of mushroom soup
1 cup shredded cheddar cheese
1 cup milk
1/2 cup sour cream
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/4 cup chopped fresh parsley (optional, for garnish)
Instructions
1. In a large bowl, combine diced potatoes, ham, onion, cream of mushroom soup, cheddar cheese, milk, sour cream, garlic, salt, pepper, and paprika. Stir until evenly mixed.
2. Pour mixture into the crockpot and spread out evenly.
3. Cover and cook on low for 6-7 hours or high for 3-4 hours until potatoes are tender.
4. Stir gently and check for doneness.
5. Garnish with fresh parsley and serve warm.
Notes
For extra texture, add a topping of crushed crackers or breadcrumbs during the last 30 minutes.
Use Yukon gold or red potatoes for best texture.
Parboil potatoes to reduce crockpot time by an hour.
