  • – 1/2 teaspoon (3 ml) freshly cracked black pepper
  • – 1 tablespoon (15 ml) cooking oil
  • – 5-6 cloves fresh garlic, minced
  • – 1 cup chicken stock (chicken broth) (250 ml)
  • – 2 teaspoons (10 ml) white grape juice vinegar
  • – ½ cup dairy-free thickened cream (coconut cream) (125 ml)
  • – pinch dried chilli flakes (red pepper flakes), optional
  • – 1/3 cup dairy-free parmesan cheese, finely grated (35 g/1 1/4 oz)
  • – 200 g (7 oz) baby leaf spinach

Instructions

  1. Cut the chicken into sizeable pieces (around 2 inches each) and place them in a large bowl with salt, thyme, and pepper. Toss thoroughly to ensure they are evenly coated.
  2. Warm the oil in a frying pan or large skillet over medium-high heat and add the chicken. Sear for 3-4 minutes per side until just cooked through.
  3. Transfer the chicken to a plate, cover it with foil, and introduce the garlic to the pan. Sauté for about 1 minute, stirring frequently to avoid burning.
  4. Pour in the stock and vinegar, using a spatula to scrape up any browned bits from the bottom of the pan. Allow it to simmer and reduce for approximately 1 minute, or until it is reduced by half.
  5. Incorporate the cream and chili flakes, stirring well. Let it simmer again, reducing until it thickens slightly.
  6. Mix in the parmesan cheese, stirring until it has fully melted.
  7. Return the chicken to the pan, add the spinach, and cook while stirring until the spinach wilts and everything is heated through.
