Description

A comforting and creamy lemon chicken orzo soup that warms the soul with every spoonful.


Ingredients

  • 2 tablespoons olive oil
  • 1 minced shallot
  • 2 cloves minced garlic
  • 4 cups chicken broth
  • 1 cup orzo pasta (or rice)
  • 2 cups chopped rotisserie chicken
  • 1/4 cup lemon juice
  • 2 eggs
  • 1 tablespoon dill (fresh or dried)
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the minced shallot and minced garlic, cooking until fragrant and the shallot is translucent.
  3. Pour in the chicken broth and bring to a simmer.
  4. Add the orzo pasta (or rice) and cook according to package instructions until tender.
  5. Stir in the chopped rotisserie chicken and lemon juice.
  6. In a separate bowl, whisk the eggs and temper them by adding a ladle of the hot soup while whisking.
  7. Gradually add the tempered eggs back into the soup while stirring continuously to create a creamy texture.
  8. Add dill, salt, and pepper to taste.
  9. Serve hot and enjoy.
