Ingredients

- 2 tablespoons olive oil
- 1 minced shallot
- 2 cloves minced garlic
- 4 cups chicken broth
- 1 cup orzo pasta (or rice)
- 2 cups chopped rotisserie chicken
- 1/4 cup lemon juice
- 2 eggs
- 1 tablespoon dill (fresh or dried)
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the minced shallot and minced garlic, cooking until fragrant and the shallot is translucent.
- Pour in the chicken broth and bring to a simmer.
- Add the orzo pasta (or rice) and cook according to package instructions until tender.
- Stir in the chopped rotisserie chicken and lemon juice.
- In a separate bowl, whisk the eggs and temper them by adding a ladle of the hot soup while whisking.
- Gradually add the tempered eggs back into the soup while stirring continuously to create a creamy texture.
- Add dill, salt, and pepper to taste.
- Serve hot and enjoy.
