- – 1 cup (240 ml) uncooked long-grain white rice
- – 1 15-ounce can (425 g) black beans, drained, rinsed
- – 1 cup (160 g) frozen corn kernels
- – 1 16-ounce jar (450 g) salsa, any flavor
- – 2 cups (480 ml) vegetable broth
- – 2 tablespoons (30 ml) taco seasoning, store-bought or make your own
- – 1 cup (120 g) shredded cheese alternative
- – 3 green onions, white parts only, sliced

- – chopped fresh cilantro
- – sliced avocado or diced avocado
- – dairy-free sour cream alternative
Instructions
- Set your oven to reach a temperature of 375° Fahrenheit.
- In a baking dish, combine uncooked long-grain white rice, drained black beans, corn kernels, a jar of salsa, vegetable broth, taco seasoning, and the white portions of the sliced green onions.
- Mix the ingredients thoroughly until they are evenly distributed. Cover the dish securely with foil.
- Place the covered dish in the preheated oven and let it bake for 50 minutes.
- After baking for 50 minutes, take the dish out and remove the foil. Check the rice for doneness. If it’s not cooked, cover the dish again and continue baking, checking every 5 minutes until the rice is tender.
- Once the rice is fully cooked, remove the foil and sprinkle the top with the remaining shredded cheese.
- Put the dish back in the oven and bake without cover for another 10 minutes or until the cheese melts.
- After the cheese has melted, take the baking dish out and allow it to cool for 10 minutes.
- After cooling, top the casserole with the green parts of the sliced green onions, fresh cilantro, avocado slices, and a dairy-free sour cream alternative. Serve while warm.
