Ingredients

- 2 large sweet potatoes
- 1 cup chopped mushrooms
- 2 cups fresh spinach
- 1/2 cup cream cheese
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Pierce sweet potatoes with a fork and bake for 45-60 minutes until tender.
- Heat olive oil in a skillet over medium heat. Add garlic and mushrooms, cooking until mushrooms are soft.
- Stir in spinach and cook until wilted.
- Remove from heat and mix in cream cheese and shredded cheese until creamy.
- Once sweet potatoes are done, cut them in half and scoop out some of the flesh, mixing it with the mushroom-spinach mixture.
- Spoon the mixture back into the sweet potato halves, season with salt and pepper.
- Return to the oven for an additional 10 minutes until heated through.
- Serve warm and enjoy your comforting meal!
