Savory sweet potatoes filled with creamy mushroom and spinach, a nourishing and delicious meal.


Ingredients

  • 2 large sweet potatoes
  • 1 cup chopped mushrooms
  • 2 cups fresh spinach
  • 1/2 cup cream cheese
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pierce sweet potatoes with a fork and bake for 45-60 minutes until tender.
  3. Heat olive oil in a skillet over medium heat. Add garlic and mushrooms, cooking until mushrooms are soft.
  4. Stir in spinach and cook until wilted.
  5. Remove from heat and mix in cream cheese and shredded cheese until creamy.
  6. Once sweet potatoes are done, cut them in half and scoop out some of the flesh, mixing it with the mushroom-spinach mixture.
  7. Spoon the mixture back into the sweet potato halves, season with salt and pepper.
  8. Return to the oven for an additional 10 minutes until heated through.
  9. Serve warm and enjoy your comforting meal!
