- 1 cup orzo pasta
- 2 cups butternut squash, diced
- 2 cups fresh spinach
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- Olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the diced butternut squash with olive oil, salt, and pepper, and spread on a baking sheet. Roast for 25-30 minutes until tender.
- Sauté the onion and garlic in olive oil until soft.
- Add the orzo and vegetable broth, bringing to a simmer.
- Cook until orzo is al dente, about 8-10 minutes.
- Stir in the heavy cream and spinach, and cook until the spinach is wilted.
- Add the roasted butternut squash and half of the Parmesan cheese, mixing well.
- Serve warm, topped with remaining Parmesan cheese.
Notes
For a more robust flavor, consider adding a pinch of nutmeg when stirring in the heavy cream.
