  • 1 cup orzo pasta
  • 2 cups butternut squash, diced
  • 2 cups fresh spinach
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced butternut squash with olive oil, salt, and pepper, and spread on a baking sheet. Roast for 25-30 minutes until tender.
  3. Sauté the onion and garlic in olive oil until soft.
  4. Add the orzo and vegetable broth, bringing to a simmer.
  5. Cook until orzo is al dente, about 8-10 minutes.
  6. Stir in the heavy cream and spinach, and cook until the spinach is wilted.
  7. Add the roasted butternut squash and half of the Parmesan cheese, mixing well.
  8. Serve warm, topped with remaining Parmesan cheese.

Notes

For a more robust flavor, consider adding a pinch of nutmeg when stirring in the heavy cream.
