  • 6 cups yellow squash (about 3 medium-sized squash)
  • ½ medium vidalia onion (chopped)
  • 1 teaspoon salt
  • 1 egg (lightly beaten)
  • 4 ounces sharp cheddar cheese (1/2 cup shredded)
  • 2 ounces gruyere cheese (1/4 cup shredded)
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 1 teaspoon fresh thyme
  • ½ sleeve Ritz crackers (crushed)
  • 2 tablespoons butter (for topping)
  • 2 tablespoons parmesan cheese (finely grated)
  • 1 teaspoon parsley (chopped)

Instructions

  1. Preheat the oven to 350ºF and lightly butter a 2-quart baking dish.
  2. Melt 1 1/2 tablespoons of butter in a large skillet over medium heat.
  3. Add the sliced yellow squash and chopped vidalia onion, along with ½ teaspoon of salt.
  4. Cook until the squash softens but isn’t mushy, about 10 minutes, stirring often.
  5. Drain any excess liquid from the squash mixture in a colander.
  6. Whisk together the lightly beaten egg, sour cream, mayonnaise, shredded cheddar, shredded gruyere, fresh thyme, the remaining ½ teaspoon salt, and pepper.
  7. Fold in the cooked squash and onions into the egg mixture, then spoon into the prepared baking dish.
  8. Melt 2 tablespoons of butter in a separate bowl and combine it with the crushed Ritz crackers, grated parmesan, and chopped parsley.
  9. Sprinkle the topping over the squash mixture.
  10. Bake in the preheated oven for about 20 minutes, or until the top appears golden brown.
